I think the best way to visualize the workflow is to use Visio and use the "Cross Functional Flowchart" template.

This will allow you to quickly see who does what.

Just don't forget to add a "System" function which contains the "Start" and "End" of the workflow.

And "Curam" which shows the automatic processes. I think separating them allows you to reduce the noise better.
